Bacon Wizard Ltd is the culmination of many years planning and research.
Most producers are familiar with either the tradition, or the science of curing, to the exclusion of the other.
We differ in our methods because we champion ancient tradition, acknowledge modern science and understand how they relate to each other.
This allows us to enable natural processes to flourish, and to take responsibility for them doing so in the correct way.
It also means we can bring truth to the ideal that ethical practice yields better results; something that should be, but isn’t always the case.
The most valuable ingredient of all is time. Great bacon, ham or salami should be allowed to mature like a fine cheese!
Some of it is done using smoke, but no mirrors! We believe that this industry is advanced by sharing knowledge, and being transparent in our actions.
